Menu & Taste
There are 4 kinds of ramen in total.
Here is the menu, which requires a meal ticket.
There are two mainstay menus, soy sauce and back fat soy sauce, and two fascinating menus, kombu-sui tsukemen (tsukemen with kelp water) and truffle-scented mazesoba (mazesoba with truffle).
The orthodox, but not ordinary shoyu ramen
First, let’s start with the orthodox Shoyu Ramen.
The soy sauce broth is candy-colored, with no cloying oil, and the noodles are thin and a little firm. The noodles are thin and a little firm, and the chashu pork is made up of two pieces of chicken and one large piece of pork, which shows the attention to detail of the chef. The soup is as light as it looks, and the thin noodles are easy to eat with the delicate flavor of the soy sauce.
Mazesoba with an elegant aroma
From the menu that does not seem to be a standard item, we chose mazesoba.
From the moment the bowl is placed on the table, the aroma of truffles is wafting from the eggs.
There seems to be a certain way of eating mazesoba, but you can safely assume that it is almost the same as ordinary mazesoba.
The flat, medium-thick noodles are very satisfying. My general impression of mazesoba is that it is like Taiwanese mazesoba with lots of garlic and a strong, bold flavor, but this is completely different.
That’s all for this time.
I introduced only soy sauce and mazesoba, but there are a total of four varieties, and the taste was good enough to make me want to try the other two. The mazesoba, in particular, had a slightly different taste that overturned the concept of what I had eaten before, and it was very innovative.
I have uploaded a youtube version.
